Layer the Chicken: Place the 2 chicken breasts flat on the bottom of your slow cooker.
Add the Broth and Seasonings: Pour the 2 cups of chicken broth over the chicken, then sprinkle in the ranch seasoning mix, chili powder, cumin, and garlic powder. Stir gently to distribute the spices.
Add the Beans and Tomatoes: Pour in the drained corn, black beans, and kidney beans, then add the can of diced tomatoes with green chili including the liquid. Stir everything together well.
Cook on Low: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. The chicken should be very tender and easily shreddable at the end.
Shred and Melt: Remove the chicken breasts and shred them with two forks, then return the shredded chicken to the slow cooker. Add the cubed cream cheese and stir continuously for 2 to 3 minutes until completely melted and smooth.
Stir in Cheddar: Add the 1 cup of shredded cheddar cheese and stir until fully incorporated, about 1 minute. Taste and adjust seasonings as needed.
Keep Warm: Leave the slow cooker on warm setting while you prepare bowls and toppings, up to 2 hours.
Serve: Ladle into bowls and top with extra shredded cheddar cheese, jalapeños, fresh cilantro, or a dollop of sour cream.
