Ingredients

  • 2 large chicken breasts about 1.5 pounds total, boneless and skinless
  • 2 cups chicken broth low-sodium works best
  • 1 (8 oz) package cream cheese softened and cut into cubes for faster melting
  • 1 (11 oz) can corn drained
  • 1 (15 oz) can black beans rinsed and drained
  • 1 (15 oz) can kidney beans rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chili undrained for added flavor and liquid
  • 1 (1 oz) packet ranch seasoning mix
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese plus extra for topping

Instructions

  • Layer the Chicken: Place the 2 chicken breasts flat on the bottom of your slow cooker.
  • Add the Broth and Seasonings: Pour the 2 cups of chicken broth over the chicken, then sprinkle in the ranch seasoning mix, chili powder, cumin, and garlic powder. Stir gently to distribute the spices.
  • Add the Beans and Tomatoes: Pour in the drained corn, black beans, and kidney beans, then add the can of diced tomatoes with green chili including the liquid. Stir everything together well.
  • Cook on Low: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. The chicken should be very tender and easily shreddable at the end.
  • Shred and Melt: Remove the chicken breasts and shred them with two forks, then return the shredded chicken to the slow cooker. Add the cubed cream cheese and stir continuously for 2 to 3 minutes until completely melted and smooth.
  • Stir in Cheddar: Add the 1 cup of shredded cheddar cheese and stir until fully incorporated, about 1 minute. Taste and adjust seasonings as needed.
  • Keep Warm: Leave the slow cooker on warm setting while you prepare bowls and toppings, up to 2 hours.
  • Serve: Ladle into bowls and top with extra shredded cheddar cheese, jalapeños, fresh cilantro, or a dollop of sour cream.
