  • 2/3 cup natural chunky peanut butter or any nut butter like almond or sunflower seed
  • 1 cup unsweetened shredded coconut finely shredded works best
  • 1 tablespoon cocoa powder unsweetened
  • 4 drops liquid vanilla stevia or liquid sweetener of choice
  • Optional toppings dark chocolate chips, chopped nuts, sea salt flakes, or sugar-free chocolate drizzle

Instructions

  • Combine butter and peanut butter: In a medium mixing bowl, blend the softened butter with the natural chunky peanut butter until well combined, about 1 minute of stirring.
  • Add dry ingredients: Fold in the unsweetened shredded coconut and cocoa powder, mixing thoroughly until the mixture is evenly colored and the coconut is fully incorporated, about 2 minutes.
  • Sweeten to taste: Add the liquid vanilla stevia drops one at a time, stirring well after each addition, until you reach your desired sweetness level.
  • Shape the cookies: Using a cookie scoop or tablespoon, form the mixture into balls or slightly flattened discs about 1 inch in diameter, placing each one on a parchment-lined baking sheet or plate.
  • Chill until firm: Transfer the shaped cookies to the refrigerator for 15 to 20 minutes until they hold their shape and feel firm to the touch.
  • Optional coating: If desired, melt sugar-free chocolate and dip the bottoms of each cookie, then return to the refrigerator for 5 minutes to set.
