Ingredients

  • 1 large egg room temperature works best for fluffier results
  • 1/4 cup shredded mozzarella cheese use whole milk mozzarella for better texture
  • 1 tablespoon sugar-free vanilla pudding mix dry powder, not prepared pudding
  • 1/4 teaspoon cake batter flavor or vanilla extract if you prefer a simpler taste
  • Optional toppings: butter, sugar-free syrup, whipped cream, fresh berries, cream cheese, or almond butter

Instructions

  • Combine ingredients: Crack your egg into a blender or food processor, then add the shredded mozzarella cheese, sugar-free vanilla pudding mix, and cake batter flavor. Blend on high speed for 30 to 45 seconds until the mixture is completely smooth and creamy with no visible cheese lumps.
  • Preheat the waffle iron: Set your waffle iron to medium-high heat and allow it to warm for 2 to 3 minutes until it's hot and ready.
  • Cook the waffle: Lightly grease the waffle iron with butter or cooking spray, then pour approximately half of the batter onto the center of the iron. Close the lid and cook for 3 to 4 minutes until the waffle is golden brown and crispy on the outside.
  • Remove and serve: Use a fork or small spatula to gently lift the waffle from the iron and place it on a plate. Repeat with remaining batter to make a second waffle. Serve immediately while warm and crispy.
