Ingredients

  • 1 large egg room temperature works best
  • 1 heaping tablespoon almond flour finely ground for the smoothest crust
  • 1/2 cup shredded mozzarella plus more for topping
  • 1 tablespoon grated parmesan adds a sharp, savory depth
  • 1/8 teaspoon Italian seasoning dried works perfectly
  • 1/8 teaspoon garlic powder for extra flavor
  • 2 to 3 tablespoons pizza sauce sugar-free or your favorite brand
  • Pizza toppings pepperoni slices, Italian sausage, bacon, mushrooms, bell peppers, olives, or fresh basil

Instructions

  • Combine the dry ingredients: In a small mixing bowl, whisk together the almond flour, 1/2 cup mozzarella, parmesan, Italian seasoning, and garlic powder until well blended, about 30 seconds.
  • Add the egg: Crack the egg into the center of the dry mixture and stir vigorously until a thick dough forms, roughly 1 minute. The mixture should come together into a cohesive ball.
  • Divide and shape: Divide the dough into 2 equal portions and place each on a parchment-lined baking sheet, spacing them about 3 inches apart. Using your fingers or the back of a spoon, gently flatten and shape each portion into a thin crust, roughly 4 to 5 inches in diameter and about 1/4 inch thick.
  • Pre-bake the crusts: Place the baking sheet in a preheated 375°F oven and bake for 8 to 10 minutes until the crusts are set and lightly golden around the edges. Remove from the oven and let cool for 2 minutes.
  • Add the sauce: Spread 1 to 1.5 tablespoons of pizza sauce evenly over each crust, leaving a small border around the edges.
  • Layer the toppings: Sprinkle your choice of toppings over the sauce, keeping portions moderate so the crust stays crispy. Pepperoni, sausage, and cheese are classic choices that work beautifully.
  • Add extra cheese: Top with additional mozzarella or your preferred cheese blend to get that melty, golden finish you love.
  • Final bake: Return the pizzas to the 375°F oven for 5 to 7 minutes until the cheese is melted and bubbly and the toppings are heated through. Watch carefully to avoid over-browning.
