Instructions

  • Slice the Sausage: Remove the andouille from its casing and slice it into half-moons about a quarter-inch thick, this ensures faster cooking and better seasoning distribution throughout the rice.
  • Heat Your Pan: Pour olive oil into a large skillet over medium-high heat and let it warm for about 1 minute until shimmering.
  • Brown the Sausage: Add the sliced sausage to the hot oil and cook for 5-7 minutes, stirring occasionally, until the edges are caramelized and the fat has rendered into the pan.
  • Sauté the Vegetables: Stir in the diced onion and bell pepper, cooking for 3-4 minutes until they begin to soften and the onion becomes translucent.
  • Add the Cauliflower Rice: Pour both bags of frozen cauliflower rice directly into the skillet with the sausage and vegetables, breaking up any large clumps with your spoon as it hits the hot pan.
  • Season the Mix: Sprinkle the cajun seasoning over the entire mixture and add salt and pepper to taste, stirring constantly for about 2 minutes to distribute the seasonings evenly.
  • Cook Until Tender: Continue cooking for 5-8 minutes, stirring frequently, until the cauliflower rice is heated through and any excess moisture has evaporated, the texture should be light and slightly caramelized, not mushy.
