Prepare the Chicken Filling
1. Add the Chicken: Place the boneless chicken breasts into the bottom of your crockpot, arranging them in a single layer if possible.
2. Season and Layer: Sprinkle the ranch seasoning and garlic powder evenly over the chicken, then scatter the cubed cream cheese and shredded cheddar cheese on top.
3. Add Liquid: Pour the chicken broth or water around the sides of the chicken to help distribute heat and prevent sticking.
4. Cook Low and Slow: Cover the crockpot and cook on the low setting for 3.5 to 4 hours, until the chicken is extremely tender and shreds easily with a fork.
5. Shred and Mix: Remove the chicken from the crockpot, shred it using two forks, and return it to the pot along with the crumbled bacon, stirring everything together until the cheeses are fully melted and the mixture is creamy and uniform.
Assemble the Sandwiches
1. Toast the Rolls: Lightly toast the hoagie rolls on a griddle or in a toaster oven for 2 to 3 minutes until they're warm and slightly crispy on the outside.
2. Layer the Base: Spread a small amount of ranch dressing on the bottom half of each roll, then add a handful of chopped lettuce for structure and freshness.
3. Add the Filling: Spoon the warm crack chicken mixture generously onto the lettuce, about 1/2 to 3/4 cup per sandwich, allowing some of the creamy filling to nestle into the lettuce.
4. Top and Serve: Cap each sandwich with the top half of the roll and drizzle the top with a bit more ranch dressing if desired, then serve immediately while the filling is still warm.
