Ingredients

  • 1/2 cup shredded cheddar cheese plus more for pressing onto the griddle
  • 1 tablespoon almond flour helps bind the mixture and adds structure
  • 1 egg beaten
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder optional for savory depth
  • Fresh herbs such as chives or parsley, optional

Instructions

  • Combine Ingredients: In a small bowl, whisk together the beaten egg, almond flour, and shredded cheddar cheese until well combined and smooth, about 30 seconds.
  • Season to Taste: Add a pinch of salt, pepper, and any optional seasonings like garlic powder or fresh herbs if desired, then stir to combine.
  • Rest the Batter: Let the mixture sit for 1-2 minutes so the almond flour can fully absorb the egg, creating a slightly thicker batter.
  • Preheat Waffle Iron: Preheat your waffle iron to medium-high heat and lightly grease it with cooking spray.
  • Cook the Chaffle: Pour half the batter into the center, sprinkle a pinch of extra cheddar cheese on top, close the lid, and cook for 3-4 minutes until golden and crispy on the outside.
  • Remove and Cool: Using a thin spatula, carefully lift the chaffle from the waffle iron and transfer to a plate or wire rack to cool for 1-2 minutes.
  • Repeat: Cook the remaining batter in the same way to create a second chaffle.
  • Serve: Enjoy your chaffle warm and crispy, either on its own or with your favorite dipping sauce like sour cream, ranch dressing, or salsa.
