Ingredients

  • 1 (10 oz) bag frozen cauliflower rice about 2 1/4 cups, no need to thaw
  • 2 tablespoons olive oil extra virgin works beautifully
  • 1/2 lime freshly squeezed juice
  • 1/4 cup cilantro chopped, or use parsley if you prefer
  • salt and pepper to taste
  • Optional add-ins minced garlic, diced jalapeño, red pepper flakes, or sesame seeds

Instructions

  • Heat the Oil: Place a large skillet over medium-high heat and add the olive oil, letting it warm for about 1 minute until shimmering.
  • Cook the Cauliflower: Add the frozen cauliflower rice directly to the skillet (no thawing needed) and cook for 5-7 minutes, stirring occasionally, until the rice is tender and any excess moisture has evaporated.
  • Add Aromatics: If using minced garlic, add it during the last 1-2 minutes of cooking and stir constantly so it doesn't burn.
  • Finish with Flavor: Remove from heat and immediately stir in the fresh cilantro and lime juice, then season with salt and pepper to taste.
