Ingredients

  • 1 pound ground beef 80/20 blend works best for flavor and texture
  • 1 yellow onion chopped into bite-sized pieces
  • 1 bell pepper chopped, any color you prefer
  • 1 small head cabbage cored and chopped into roughly 1-inch pieces
  • 1 (14 oz) can diced tomatoes with juices included
  • 2 teaspoons Tony Chachere's creole seasoning or your favorite creole blend
  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon black pepper
  • 2 cups shredded cheddar cheese sharp or mild, your preference
  • Optional toppings fresh parsley for garnish, sour cream for serving, hot sauce for extra heat

Instructions

  • Brown the Beef: In a large skillet over medium-high heat, add the ground beef and cook for 5-7 minutes, breaking it apart as it cooks, until no pink remains. Drain any excess fat if needed.
  • Sauté the Aromatics: Add the chopped onion and bell pepper to the skillet with the cooked beef and cook for 3-4 minutes, stirring occasionally, until the vegetables begin to soften.
  • Season the Mixture: Sprinkle the Tony Chachere's creole seasoning, garlic powder, smoked paprika, and black pepper over the beef and vegetables. Stir well to distribute the seasonings evenly and cook for 1 minute until fragrant.
  • Add the Cabbage: Pour the chopped cabbage into the skillet and stir to combine with the beef mixture. The cabbage may seem like a lot, but it will cook down significantly.
  • Pour the Tomatoes: Add the entire can of diced tomatoes with its juices to the skillet and stir everything together. The liquid will help steam the cabbage and create a flavorful sauce.
  • Simmer: Reduce the heat to medium and let the skillet simmer uncovered for 15-20 minutes, stirring occasionally, until the cabbage is tender and most of the liquid has reduced.
  • Add the Cheese: Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover with a lid or aluminum foil for 2-3 minutes to allow the cheese to melt completely.
