Ingredients

  • 1 pack (12 slices) regular sliced bacon cut in half lengthwise for easier wrapping
  • 1 large yellow onion peeled and sliced into 1/2 inch thick rings
  • BBQ sauce for serving for dipping or drizzling
  • Salt and pepper to taste, optional
  • Garlic powder or smoked paprika optional for extra flavor

Instructions

  • Separate the Onion Rings: Slice your large yellow onion into rings approximately 1/2 inch thick, then gently separate each ring from the whole onion so you have individual rings to work with.
  • Wrap with Bacon: Cut each bacon slice in half lengthwise to create longer, thinner strips that wrap more easily. Wrap one strip around each onion ring, overlapping the ends slightly, and secure with a toothpick if needed to keep it in place during cooking.
  • Arrange on Baking Sheet: Place the wrapped onion rings on a parchment-lined baking sheet in a single layer, spacing them about 1 inch apart so heat can circulate evenly around each one.
  • Season: Sprinkle lightly with salt, pepper, and any optional seasonings like garlic powder or smoked paprika if desired.
  • Bake: Preheat your oven to 400 degrees Fahrenheit, then bake the wrapped rings for 25 to 30 minutes until the bacon is crispy and the onion is tender, turning them halfway through cooking for even browning.
  • Cool and Serve: Carefully transfer the cooked rings to a paper towel-lined plate to drain any excess grease, let them rest for 2 to 3 minutes, then arrange on a platter and drizzle with BBQ sauce or serve it on the side as a dipping sauce.
